Nopal Tagine. 100% Vegan and Gluten-Free

In addition to being high in fiber, nopal cactus is also known for being high in vitamin C and rich in antioxidant and anti-inflammatory properties. In other words, they’re good for you.
Ingredients:
1/4 c. olive oil
1 large onion chopped
2 cloves garlic peeled and minced
1/2 cup pre-cooked green peas
2-3 medium potatoes cut into 2″ pieces
2 large carrots, cut into 1 ” slices
2 nopal pads cut in rectangular slices
1 preserved lemons, cut into quarters and the pulp removed
2 T. chopped cilantro
1 T. tomato paste
1/3 c. water
salt and pepper
Directions:
- Coat clay platter with olive oil.
- Spread onion evenly on bottom. Cook 5 min on low heat, then add garlic.
- Add vegetables in a pyramid, densest ones first: carrots, potatoes, nopal, peas.
- Top with lemon and cilantro.
- Mix the paste with water and drizzle over the vegetables.
- Add cover.
- Cook on very low heat for 45min. Check periodically to see that there is enough liquid. Add water if needed.
- Once cooked, remove from fire, and drizzle with 1 coffee spoon olive oil.
Healthy tip!
There are huge health benefits from cooking with a tagine. You use very little oil and water. Meats and vegetables are pressure cooked on low heat, simmering in their own juices, and the flavors are intense.
